Risotto all'Ortolana preparation
Preparation method for the Risotto: Pour Extra Virgin Olive Oil into a pan, add the risotto and toast for 2 minutes. Add a ladle of broth, cook for 25 minutes over moderate heat, stirring and adding broth. Once cooked, turn off the heat and add the grated Parmesan, mix and leave to rest for a few seconds, then it is ready to serve.
